Royce Chocolate and Coated Coffee Beans



The squarish chocolate pieces are Royce Chocolate with Coffee fillings. I placed them in between the cake batter and then top up some more batter. After that I added a couple of Royce Chocolate Coated Coffee Beans on top. Don't they look pretty? ":)

I've got excess batter so I placed the rest into a mini tube tin.

These are the end results. Not too sweet but just nice with very intense chocolate and coffee taste :)

Mocha Oreo Muffins

We know that chocolate goes well with Oreo sandwiches but I thought maybe it will also go well if I add some coffee into it? Here it is :)

Freshly baked Mocha Oreo Muffins. I tried some and quite like the taste, especially after a few hours when the flavour develops.

This is how the muffins look after 10 minutes into the oven.

A Day of Golf in JB


Last night, my husband asked me to join him and two of our church friends for golf in Daiman, JB.
Don't be mistaken by the photo - he insisted that I post with the golf club. I don't know how to play golf - I merely accompanied him and took pictures and videos of how they played.


Some palm tree fruits and one of them left 3 golf clubs on the grass.

Durian Profiteroles or Durian Puffs

A profiterole is a popular choux pastry. Choux paste is normally baked into small round puffs that are served cold with a sweet filling and sometimes with a topping. You can either fill it with whipped cream or pastry cream filling.


The puffs may be left plain or made to resemble swans or decorated with chocolate sauce, caramel, or a dusting of powdered sugar. In the US, a profiterole is also known as a cream puff.

Durian fillings. I did not follow any recipe but just use good quality durian, added some sugar and cream to it.
These puff shells are baked for about 20-25 mins.
Piped croux pastry ready to be baked in the oven at 200 degrees C.

Well Done Eliza !


Last Friday, we attended our daughter, Eliza's ex Secondary School Prize Giving and Speech Day. She top the whole cohort in Art last year and was asked to go back to collect her certificate and gift voucher.

The sleepless nights and the many hours she put in has finally paid off. She also got Distinction for her Art for "O" levels. Now she is continuing to pursue her passion in this area in JC.


When Eliza was young, we noticed that GOD has blessed her with very good colour sense. Thus, with the encouragement of a good friend of ours, we enrolled her in Nanyang Academy of Fine Arts to further develop her interest and talent. After about 7 years with NAFA, she finally completed her upper Secondary "O" level Art course and collected her Certificate last year.


Well Done Eliza! You've made us very proud of you. Keep it up!

Chocolate Fudge Cake

My cousin bakes very well. She is able to bake Chocolate Fudge Cake as good as the one you buy from Lana.

She gave me her recipe over the phone last week. I tried it out today. Hmmm the taste is there but I need to work more on the fudge - the one I made is not as smooth as the one my cousin makes.

The is the chocolate fudge. It has cocoa, butter, agar agar powder, sugar, cream, milk and rum.

I baked the chocolate cake in a square tin and divided it into two. Let them cool before assembling the whole cake.

Birthday Cake with Hershey Chocolate Frosting


Yesterday, I made this Birthday Cake for a good friend of ours. As you can see from the inside of the cake, I had 4 layers and in between each layer I frosted them with Chocolate Frosting.

I baked two tins of butter sponge cakes; one original flavour and the other I added some cocoa powder.


I let them cool and then divided the two cakes into 4 pieces. Since I am not a professional at this, it took about 3/4 of the day to bake and assemble it.

This is the final result. I used ready made Cadbury Orange Chocolate snaps for the decoration. Some of our band members commented that they looked like potato chips coated in chocolate :)
Even though it is a few days early, RY, hope you enjoy the cake and have a wonderful year ahead. HAPPY BIRTHDAY!!!
