Homemade Mango Orange Jam

My first attempt on homemade jam. It tasted just nice - not too sweet and yet full of the real stuff - no preservatives whatsoever. Think I shall try out more homemade jams in future. Just bought some delicious, buttery durians - are you thinking what I am thinking? ;)

I mashed 2 mangoes, added one orange, about 3 tablespoons of sugar and a teaspoon of lemon juice.

After 1/2 hour of cooking the ingredients over low heat, this is the result. Imagine enjoying it with some crackers or toasted bread :)

Mini Brownies in Muffin Cups

I usually bake my brownies in one big tray and then cut them into pieces and place them in muffin cases. Today I decided to try baking them in the muffin cups instead.

I baked them for about 20 mins and they turned out well :)

California Walnuts I use for my baking. I broke them into pieces after toasting them in the oven.

Chocolate mixture melted with butter over low heat.

These brownies are without walnuts. I divided the whole recipe into two batches; one with walnuts and the other without. My teens prefer them without walnuts.

Macarons 5th Attempt

These are chocolate macarons with white chocolate and strawberry jam fillings.

This time, I switched on the air-con and let the macaron shells set for 3 hours till they are slightly hardened. No wonder the macarons selling outside are so expensive. Three hours of air-con or more, on top of the grounded almond for the shells plus chocolate fillings, time, etc.

Even though there's improvement from the previous four attempts, still there's no "footing" which a macaron is supposed to have. Have to practice more. Jia Yu, Irene!

Wholemeal Bread with Ham & Cheese and Walnuts

I bought some wholemeal flour the other day and thought I make some bread for breakfast tomorrow. Made 2 loaves with different fillings; one with walnuts and the other with ham and Parmesan cheese.

The texture turned out okay. Could not wait till tomorrow, so I had a slice of each with a cup of hot chocolate :)

These type of bread taste better after toasting them in the oven for about 5 minutes.

Macarons with Mocha and Strawberry Choco fillings

This is my fourth attempt at making French Macarons. Am not there yet but this time round I managed to add in colours! Some people take 1 year to perfect this skill but of course there are those who are so good that they were successful in their first attempt. I have to jia yu and make more attempts till I am satisfied :)

In the meantime, my family and I will enjoy these pretty macarons 8-)

Have a Blessed Weekend!

Marble Cake

Last night my daughter asked if I have ever made rainbow cakes and she showed me some pictures from the website. This morning I tried making one using a marble cake recipe but I added two more colours to it; red, green. Thus this cake has four colours altogether.

These are edible colour paste from the USA so they are safe for consumption. As you can see from the above pictures, the cake has a soft texture. I just had a slice with a cup of English Tea. Yum, yum ;)

Our son's POP

Thank GOD Renfred passed his BMT despite not being able to take his IPPT, SIT Test and participate in the 24km march. I am overwhelmed with tears for GOD's favour upon our son. He hurt his wrist about 2 months back and did not have proper physio and rest to heal his injury but still he was very positive and tried his best in what he needed to do. Thank GOD for good and understanding officers and nice platoon mates during his time in Tekong.

The passing out recruits doing the BMTC Roar to show appreciation to their fathers who served the army before them. The next picture shows them throwing up high their jockey caps in celebration for completing their BMT.

We had the honour of putting on his Jockey cap for him before they did the BMT Roar.

Apple Streusel Pie and Sugar Dough Gingerbread Men with Choco Icing

The same CG member who ordered my first batch of Cinnamon Gingerbread men wanted 40 pcs of pink and blue Gingerbread men for her daughter's Gym mates. So I found this Sugar Cookie Dough recipe and tried out the above. The pink men came out nice but the blue men, because the dough was light yellow, they turned green :)

Then, I decided that I shall make some choco icing and did an outline for each of the men. Hope the children enjoy eating them :)

Made one big and one small Apple Streusel Pies last Friday for CG and for my family. It has been quite some time since I made them. I remember making quite a few of them, many years back, for our church's fund-raising event at KAP. How time ZOOOOOM. KAP was sold a couple of years back and now our church is rebuilding again.
