Homemade Black/Blue/Straw/Raspberry Conserve

I bought these pretty bottles from Daiso for S$2/- each to store my Black/Blue/Straw/Raspberry Conserve.

Tasted some of the conserve with a piece of cracker. Yum! Yum! :)

Just look at the chunks of berries in the bottles.

I have to sterilize the bottles and caps before filling them up with the conserves.

Heart-shaped Hot Cross Bun

Three of us ladies from the LTP Covenant class are baking Hot Cross Buns for the people attending the class tonight. Their spouses are especially invited to join us to remember our LORD's LOVE for us this Maundy Thursday.

Made 24 pcs of 40gm each plus the heart-shaped one from 2 recipes.
This will be my second last batch of Hot Cross Buns for this year. Will be baking the last batch for Genesis this Saturday and that will end my Hot Cross Buns baking for 2011 :)

When I survey the wondrous cross

On which the Prince of Glory died

My richest gain I count but loss

And pour contempt on all my pride

V2

Forbid it Lord that I should boast

Save in the death of Christ my God

All the vain things that charm me most

I sacrifice them to His blood

V3

See from His head His hands His feet

Sorrow and love flow mingled down

Did ere such love and sorrow meet

Or thorns compose so rich a crown

V4

Were the whole realm of nature mine

That were an offering far too small

Love so amazing so divine

Demands my soul

My life my all

Durian and Walnut Muffins and Durian Egg Tarts

Last evening I bought some durians from Woodgrove. Then ideas kept coming to my mind.... ;)Let's make some Durian Muffins. But what can go with Durians??? Vanilla? Walnuts? Why not? :)

So, I woke up at 6am this morning to bake a batch of Durian Walnut Muffins. I did not add anything to the Durians - just pure 100% quality durian flesh which I placed in the centre of the muffins and topped them with walnuts. Had one with a cup of coffee before going to 9am service. Of course, after eating, I gurgled my mouth with Listerine, just in case.... ;)

Shared some of them with 4 PTots teachers and a friend :)

Durian Egg Tarts. My regular client ordered some Original Egg Tarts and I thought, since Durians are in season, I shall make two special Durian Egg Tarts for her. Hope she likes them :)

Rum and Raisins Dark Chocolate Truffles

Made these Dark Chocolate Truffles for fun :) The ones coated with nuts are Kahlua with Almond Truffles, the Cocoa coated ones are with Rum and Raisins and the ones sprinkled with icing are just plain Dark Chocolate Truffles.

Melted dark chocolate before shaping and coating.
Raisins soaked with rum. I love the Rum and Raisins Truffles. Each bite you could taste the "pumped up" rum raisins. Yummy :)

The Almond goes very well with the Kahlua.

Wonder who should I bless these delightful Dark Chocolate Truffles to ??? ;)

Hot Cross Buns

I was planning to make Hot Cross Buns for the month of April. Then A gave me the recipe last week. I immediately tried it out for my family and they love it.

Today is my second attempt at this recipe. What you see is two recipes i.e. I doubled the portion. Each recipe yields about 16 small pieces. Since the group of people I plan to bless with these Hot Cross Buns have other food prepared for them, I decided to give some to my husband's Greek teacher and another lot to my son's CG members who will be coming over to our home for CG meeting later.

I made some modification to the recipe (don't know why, but I enjoy trying out different variations, just can't stick to the original :)) I added cranberries and raisins soaked in orange juice instead of candid fruits.

Thank GOD so far the dough turned out okay and it is quite easy to manage. Will be making more of these in future :)
