March 2011


Our family celebrated our 23rd Anniversary at the Fish Bistro at Greenwood Avenue. The Head waiter recommended the above Deep water Rock Fish plus some other seafood.



Peter and Renfred enjoyed the Rock Fish and the fresh Sashimi. Eliza was satisfied with her NZ grilled Sole Fish.


I decided to accumulate my baking this month and post them all at once here. I also made Tiramisu and Thai Mango sticky rice but did not take any pictures. This is an apple pie with toppings. I layered the thinly sliced apples neatly into in the crust and added some cranberries.


These are 61 individually packed cookies for a bible study class. Just felt like baking that particular day to bless a particular bible study class :)



A friend ordered a dozen of these Orange Cranberry Muffins for breakfast.


Last Friday I baked these (one big and one small) heart-shaped Double Chocolate cakes with Cream Cheese frosting. I had to attend Pete's nephew's wedding the next day so I baked these in advance. The heart-shaped birthday cake was for SF's birthday. We missed celebrating her birthday for the past 2 years so I thought better remember to bake a cake to celebrate it this year with the praiseband.


I was not satisfied with the outcome of the cake as it was a bit hard even though the taste of the chocolate and cream cheese frosting plus the almond were good. But, after this first attempt of the cake recipe, I know what I must do to improve and am sure I shall do a better job at the next attempt :)



One day, while at the market, I came across some fresh tapioca. So bought some home, washed, peeled and grated them to make some baked tapioca cakes for the church office staff. Feedback from the SP was "very nice..I had 3 pieces... better than Bengawan Solo." :)

The Ultimate Strawberry Cheesecake


I made this Ultimate Strawberry Cheesecake for our 23rd Wedding Anniversay tomorrow. Thank GOD for His faithfulness and blessings these 23 years. We know You will continue to be our Counsellor, Guide, Teacher, Provider, Portion and Shelter as we journey on earth because You are our Covenant-keeping GOD.



Because we had a late lunch, we did not have dinner. SO, we decided to cut this lovely cheesecake tonight :)


We all enjoyed it very much. It is absolutely delicious :) After eating this, Pete is thinking of how to market it for me.

At this stage, it was before I poured my homemade strawberry jam topping.


This just came out of the oven. You could see the chunks of strawberries. I pureed some and cut some of the the strawberries into chunks so that you can really taste the strawberry.



I love to use Oreo cookies for my cheesecake base. I poured the mixture into the Oreo base and bake it in the oven for about 45 minutes.

These are some of the ingredients I use for the Ultimate Strawberry Cheesecake. I bought this cake tin a couple of weeks back and decided to put it to good use :)
