It's Peter's turn to lead Bible Study on John the Baptist this Friday at CG.  He wanted me to help dig out some of our photos of Qumran caves, Jordan River and the Wilderness, taken during our Israel trip in June 2010.  So I decided to read through what was written about 4 years back.

One thing that came to my mind is that I may not remember all the beautiful places we have visited and the lessons learnt during that trip but I must and by His grace, will remember what GOD has done for us, Who Jesus is to me and that I must pledge my allegiance to Him and Him alone.

Jan - Feb 2014

This picture was taken in my daughter's apartment.  It was the night before I came back to Singapore from my visit to London.  I cooked for her two Thai friends, Maaew, Kookup and her flatmate, Farah a simple dinner of Prima Deli Chicken Curry, stirred fried Spinach with garlic and Fried Egg.  We had Nutella Pecan Pie with Ben and Jerry Ice Cream for dessert.  Had the opportunity to pray a short prayer of blessings for them as they study over there.
 
Made this Prima Deli Laska with chicken, fish ball, tau pok and siow pai chye for one of our dinners.  Tried to cook as much of her favourite homecook food as possible when I was there.

Could not resist buying their fresh raspberries from Borough's Market.  Made some Raspberry Jam. 
 
My first bake in London -  Chocolate Muffins. 

This was my last bake in London - Banana Muffins.  Did not really bake much over there as I do not want to make Eliza put on too much weight because mom was there :)  Only made twice Nutella Pecan tarts, two types of muffins and once Hokkaido Chiffon Cupcakes.
Baked this batch of raisin and walnut buns after a month of break from baking to bless the brethrens who attended the Saturday morning prayer for the church leaders.
Then came this batch of French loaves to replenish those eaten up from the freezer during my trip ;)
Must have variation right?  So made some Molten Lava Chocolate cakes garnished with fresh strawberries for breakfast ;) 

The following Saturday morning Prayer meeting,  I made these Chocolate and Cranberry Muffins.  Something simple and delicious to be baked in the morning so that the brethrens could enjoy them fresh :)
These are Taiwanese Pineapple Tarts with Blueberries.  GOD created me with the curiosity to experiment and have variety in my baking, etc.  That's why cannot stick to the norm ;)

Wanted to try adding Black and White Sesame Paste into my Kueh Lapis and I did :)

Pizza for Breakfast.  Prepared the dough the night before and kept it in the fridge.  Woke up earlier the next morning to roll out the dough, prepare the filling and baked fresh for breakfast :-)
 
Made two variations of pizzas - Ham and Cheese plus Sausage and Tomatoes.
These are buns filled with Ham and Cheese topped with more cheese, Sweet Rolls for the Monday Night Cyclists.
Yam and Sweet Potato filled with Sticky Cake Fritters :)  My cousin, who cooks and bakes very well, makes sticky cake every year for Chinese New Year.  Yummy ;)

Renfred asked if I could help him make a savory appetizer for the Youth Valentine's Day Dinner.  Am afraid of big numbers but because I wanted to support my son, I said, I shall try.  Thus, began the experimental journey of making Savory Hot dog Muffins and Kenny Rogers Corn Muffins. 

That Saturday was crazy for me.  Had a very tight schedule of going for the Saturday morning prayer, then rushed down to our old class mates gathering in the West and then hurried back to buy last minute ingredients at the supermarket and back home to bake 198 Kenny Rogers Corn Muffins :O
 
Baked Savory Sausage Muffin for the first time in my life.


Made these French loaves, a day before the old class mates gathering, to go with the curry chicken which Joyce was bringing.  Thank GOD they love it and I wished I had made more.

Also made these Prawn Rolls, which I had to wake up earlier to fry, for the old class mates gathering. Thank GOD for seeing me through that crazy Saturday, standing 4+ hours to bake the muffins.
 
Had some leftover Bak Kwa.  So..... made some Bak Kwa Garlic Buns :)
 
Using the French loaf recipe, I added walnuts, oat, sesame seeds, sunflower seeds and topped with poppy seeds.  Very fragrant ;)

Baked some mini sausage buns for another group of brethrens.

A simple dinner for my hubby - Yee Mee with fresh prawns, squid, mackerel slices, green vegetables and an egg :)

Once in a while, I feel like playing with colours.  So I made these two rainbow agar agar.  In Genesis, rainbow reminds us of GOD's covenant with Noah not to destroy the earth anymore with rain.

Prayer of Blessings for you who are in Christ Jesus...

adapted from Colossians 1:9b-14

May you be filled with the knowledge of His will
in all spiritual wisdom and understanding,
so as to walk in a manner worthy of the Lord,
fully pleasing to Him,
bearing fruit in every good work
and increasing in the knowledge of God.
May you be strengthened with all power,
according to His glorious might,
for all endurance and patience with joy,
giving thanks to the Father, Who has qualified you
to share in the inheritance of the saints in light.
He has delivered us from the domain of darkness
and transferred us to the kingdom of His beloved Son,
in Whom we have redemption, the forgiveness of sins.

Much has happened since my last blog on 15 December 2013 (which was requested to be removed, which I did with tears and in obedience for Christ's sake.)

Just a short summary of what had happened since then (as far as I could recall):
1)  I made a trip to London to visit our dear daughter from 29 December to 16 January 2014.  Grateful for this trip to experience and see a glimpse of the environment and life our dear daughter goes through over there.  Thank GOD for His safety and provision for her thus far.

2)  I took a break from worship ministry. We met last Sunday and I was requested not to put anything up about my journey in this ministry even though it is my own blog.  I just briefly pen this down for my own records so that when I look back in years to come, I could roughly remember something took place.

3)  Celebrated our son's 25th birthday on 2 Feb. 

4)  Watched "My Fairlady" (one of my favourite musicals) at Marina Sands on 11 Feb.

5)  Had our first bike ride with Renfred on 4 March.  Hope to do more together and when Eliza is back, to cycle as a family :)

6)  Celebrated our 26th Wedding Anniversary on 12 March.  We drove into JB in the morning and had a simple dinner with Renfred.  Bought over a Specialised bike from a friend for Peter as his Anniversary present.  We also sent our children a prayer of blessings on that day based on the names of GOD which we hope they will take into heart Who He is, What He has done for them and Who He is to them.

Sorry for the radio silence.  Have not stopped baking throughout this period though.  By GOD's grace sufficient, will continue to proclaim His love, grace and goodness until I see my Saviour face to face :)

A CG member asked if I could help bake a birthday cake for a well-loved church friend from her morning break.  Wanted to make something without cream as they all lived a healthy lifestyle.  So the above idea came to mind.  Simple but healthy :)

These are our two children whom we loved dearly and are very proud of.  Renfred visited his sister, Eliza after his May papers and they travelled the western part of Europe.

They are both different in personalities, etc but we love them for who they are :)
 
Shaun is one of our Elder's son.  He also visited his sister, Natasha during the same period as Renfred.  So the two pairs of siblings met for a lobster burger meal.

Sorry, my pictures are all over the place.  This was taken at the airport when we sent Renfred off to meet his sister.  Renfred's buddies since secondary school came to see him off.  One of them even came to welcome him home after his trip.

Our son, so happy to go for his break after working and saving for his trip.

This cutie pie reminds us of our son when he was a baby.  So chubby and good to pinch :)

Baked some M&M brownies for the children in the school where I did some part-time work.

Am listening to "Never Once" by Matt Redman as I upload this post.  The chorus says " Never once, did we ever walk alone, Never once did You leave us on our own.  You are faithful, GOD, You are faithful." 
My family and I can testify how faithful GOD has been to us.  My husband was out of a job for 4.5 months and GOD has provided for us during this very trying period.  We are not those who have excess savings in the bank so we were totally wiped off whatever we had, even had to consider selling our car.  But during this journey, we knew GOD can be trusted and continued to commit the situation to Him.  Thank GOD, even though if given a choice, my husband may not have chosen this job but since the LORD opened a way, he took it and started work mid last month.  We are thankful and grateful to our Jehovah Jireh (The LORD Who provides).
 
Made this cereal coated french toast filled with toffee and cranberry filling.  Crunchy outside and moist inside.  Some extra effort is needed to make this but it was worth it :)
 

Had some curry chicken leftover so made a few curry puffs with them.

Cakepops are so pretty to look at but I am quite conscious about the amount of cream that goes into it.  So I tried making two with melted chocolate instead.

Thus far, I seldom make sponge cake as I always thought it is too troublesome to whisk the egg white till stiff with a hand whisk.  I have a good Kentwood Mixer but am too lazy at times to take it out to use and then have to wash, dry and keep it into the box again :(  But after my daughter had successfully made her sponge cake without a whisk over in London, I told myself, I must try it one day.  So, I made this Victoria Sponge cake.  I dug a hole in the centre, put in a layer of Nutella, followed by another of  homemade Raspberry Jam, topped with fresh strawberries.

The night before Eliza returns to London, I made this Mackerel Fish Floss for her to bring back to go with rice, porridge or bread.  She even enjoyed with with bee hoon soup.  I added garlic, sliced ginger and chili to the Mackerel and fried it till it looks like the above.  Instead of fish meat, you can also use ikan bilis but omit the ginger.  You can fry this and keep them in the fridge.  Eat as and when you feel like it :)

The Kueh Pie Tee you find in the shops are expensive and they only fill them with turnip plus some eggs.  I fried the turnips with garlic, prawns and chicken cubes.  Topped with some fried eggs and celery.  Fill as much ingredients as you could into the tiny cups and enjoy :)

Just felt like making some Rempah for curry chicken so I did it, pounding the chili and other ingredients with some help from my husband.  Enjoyed with homemade baguette.

We saw a TV review of this Bak Kut Teh shop in Sin Ming so we decided to go and try it with our daughter as she likes the white BKT without herbs.  She will not get to eat this in London, so let her enjoy all the home-cooked food she cannot find over there.

Simple breakfast - Assorted Banana Squares - original, chocolate chips and walnut.

Last year Eliza missed this.  Her favourite - Premium White Lotus with Melon Seeds Mooncakes from Marriott.  We even tar pau one piece for her to bring back to London :)

Fried Hey Bi Hiam - Fried Shrimp with chili and meat.  Could not remember when I last made this.  This goes well with porridge, rice or bread. 

Made this Heart-shaped Japanese Cheesecake plus custom-made the necklace for Eiza's godma's birthday.

These are filled with the Fried Hey Bi Hiam mentioned above.  Made this batch of assorted flavour buns for the cyclists as they attend their first BTP training.
